They are suitable for fermented products with starter culture (starter culture), also for technologies with GDL, or the classic production of hard-smoked salami, sausages, ham and smoked meat. Ripening chambers are designed for the 2nd stage of fermentation of smoked meat products that are not subjected to heat treatment, or for drying products subjected to heat treatment.
