The main unit of this installation consists of a jacketed boiler interacting with hot or cold water, inside of which there is a rotating coil heat exchanger. The block is placed on a platform located on the boot module. All technological phases - from the supply of ingredients to the final product - take place inside this boiler. Recipes and processing phases related to the final product are planned by a personal computer installed in the control room. All phases can be planned with the required operating parameters. The objectives of this installation are: excellent quality of the final product, integrity of the pieces (in products containing diced fruits) to avoid, as far as possible, damage from heat treatment in order to optimize the uniformity of concentration
