The ESM 4550 / S is ideally suited for the manual removal of skins from round pieces of meat. And the ESM 4550/1 model allows you to degrease the ham and the scapula at the same time: by additional installation (without tools) of the double knife beam, the skin is separated from the fat, and the fat from the meat, which facilitates processing and increases the yield!
