Protomax-A - native beef collagen protein. It is used as a multifunctional protein component in the production of meat products to improve the quality of the finished product: Improves the consistency, juiciness, tenderness and presentation, reduces the risk of broth-fat swelling, stabilizes and increases the resistance of the stuffing emulsion to heat. It is produced in three fractions - long-fiber, medium-fiber and short-fiber. Presence in the recipe does not require labeling. It does not have an E-index. Used without changing the process. Universal in application. Depending on the production conditions, Protomax-A introduces the following into the stuffing: • in dry form • in hydrated form • in the form of a gel • in the composition of a protein-fat emulsion • in the form of granules • in the form of artificial bacon Improves economic performance due to: reduction of production costs, reduction of losses during heat treatment, rational use of low-grade meat raw materials.
