Potassium sorbate and sorbic acid are systemic preservatives. They inhibit the growth of most microorganisms, especially yeast fungi, inhibit the action of enzymatic (dehydrogenase) activity of molds. At pH5, sorbic acid acts 2–5 times stronger than benzoic acid, and exhibits the greatest antimicrobial and antifungal activity at a pH of about 4.5. Potassium sorbate E202, sorbic acid E200.
