Carcasses of birds from 3 months old are steamed in water, the temperature regime of which is 70-75 ° C, and the number of dives is 12-15 times. The degree of readiness for processing is checked in the same way as in the previous case. On average, the plucking procedure takes about 30-35 seconds, if it takes more time, this means that the heat treatment procedure was not completed to the end. If the skin of the carcasses is damaged, then the water temperature was higher than it should have been.
