Thanks to continuous improvements in the steam smoking method, AUTOTERM has created perfect smoking, which has advantages that no other method has. These advantages are especially expressive when processing boiled products. The smoke is produced not by decay of wood sawdust, but by means of superheated steam, which, passing through the sawdust, absorbs all the substances that form the color, taste and aroma of smoking. After that, the parody is fed into the chamber, where it condenses onto the product. Thanks to this, smoking time is significantly reduced. Parody gives a very persistent color that is not washed off by either water or steam. It is harmless because does not contain a dangerous carcinogen - benzopyrene; the content of other harmful PAHs (polycyclic aromatic hydrocarbons) is significantly lower compared to the traditional smoking method. Due to the high humidity during the smoking process, the product does not lose moisture, which means that the weight loss in the final product is significantly reduced. Due to the fact that the steam smoking process takes place at high temperature and humidity, the temperature inside the product rises throughout the entire smoking step. Due to this, the time required for the next cooking step is significantly reduced.
