The TSR is a continuous high-vacuum rotary coil evaporator for fruit and vegetable stems. The system was designed to concentrate raw fruits and vegetables at very low evaporation temperatures (below 38 C). For mixtures of pieces of product with syrup, the concentration can be approximately doubled, for example: from 8 to 15 Brix (if we assume that a portion of the syrup in the mixture remains non-concentrated during the process). The coil evaporator is equipped with its own surface condenser, which is oversized, which is necessary, taking into account the large specific volume of steam at low temperatures. The objectives of this installation are: excellent quality of the final product, integrity of the pieces (in products containing diced fruits) to avoid, as far as possible, damage from heat treatment in order to optimize the uniformity of concentration
