The Alco-HotCook type AMP-HC digester provides very quick and gentle frying, bringing it to a full readiness, cooking and restoring the product, while homogeneous temperature distribution is achieved through simultaneous mixing. The unit can be heated with thermal oil or steam. Due to the rapid frying at high temperatures, the product retains its taste and freshness. This is especially important when cooking Asian dishes (industrial boiler with a convex bottom) (heating with thermal oil). After frying, cooling by vacuum and / or injection of a cooling medium is possible. The heated surface has a short reaction time, which does not require a long time for heating and contributes to its rapid completion. Cooking time and temperature can be easily and accurately adjusted via the control panel and software automation.
