Proofing cabinet "Breeze-122" is designed for the final proofing of dough pieces on the rack trolleys TS-1, TS-2, TS-9-KZ and is recommended for working with "Monsoon-rotor" furnaces model 99, 99K, 99E, 99EK, Monsoon rotor model 77, 77E, Cyclone rotor-216. Made entirely of stainless steel. Collapsible design. Disassembled delivery ensures safety and facilitates transportation to the installation site, simple assembly does not require special staff skills. The working environment with the specified parameters in the cabinet volume is created by the air conditioner located on the roof, its installation, dismantling and maintenance are maximally facilitated. The inner lining is made of stainless steel. Modern non-hygroscopic material is used for thermal insulation. The increased electric power of the “air” heating elements reduces the time needed to heat the cabinet to the set temperature in preparation for work. During operation, when installing rack trolleys with dough pieces in a cabinet, a quick set of temperature and humidity of the working medium to the specified values is provided. In operating mode, the set temperature and humidity parameters are maintained with an accuracy of + -2%. The water level in the steam generator is automatically maintained.
