The device is intended for boiling various confectionery masses, such as toffee, caramel, jelly, sorbet. The equipment consists of two boilers located one below the other. The upper boiler is a hemispherical copper bowl, located in a cast-iron shirt and used to cook the mass. The boiler is closed with a cover with a receiving funnel for loading and inspecting the boiler. In the space between the copper and cast-iron boiler, steam is supplied with a pressure of 6 atmospheres. Two fittings are mounted in the lid of the boiler: for supplying syrup coming through the pipeline, and for venting steam. In the lower part of the boiler, a fitting is provided for the release of the boiled mass into the lower boiler-receiver. The upper boiler is equipped with an anchor mixer, driven by a gear motor. The lower receiving boiler is a copper cylindrical vessel with a hemispherical bottom mounted on a special rotary fork. After cooking, the fork with the boiler rotates around its axis, and the cat is removed from under the lid for unloading. Before draining the mass from the upper boiler to the lower one, it is pressed to the lid by pressing the pedal. The target temperature of the finished mass is recorded using a manometric remote thermometer.
