The design of Moba machines combines the excellent quality of breaking eggshells with the highest level of fluid recovery. The egg breaking device has special temporary triggering and positioning settings that provide breaking of the shell with the least risk of shell fragments entering the final product. After breaking the eggs, the drain time and the angle of the egg breaking device are adjusted to ensure maximum fluid recovery. The slanted design prevents the accumulation of small amounts of fluid behind the knife, which is a problem area causing a lower level of fluid recovery by many other systems on the market. Moba's breakdown systems are designed to maximize product yields, the highest dry matter content for the yolk, and the highest protein purity, all combined with the lowest possible by-product of the whole egg.
