After the process of evisceration, the carcasses undergo preliminary cooling, which can be carried out using air and / or in a water bath. For water cooling, a continuous water chiller is proposed, operating on the principle of countercurrent flow, where products move towards the flow of chilled liquid. Carcasses are automatically loaded into the installation in order to quickly lower the temperature to 4ºС.
