The sea urchin processing workshop is based on two 40-foot containers and is divided into two modules. The first module consists of a section of accumulation, evisceration, cleaning caviar. The second module consists of a medium temperature chamber with a volume of 25 m³, a sorting and packaging section. In the processing zone, sea urchin is fed to the drive, where it is opened and transferred to the cutting and evisceration zone. Caviar is removed and stacked in trays, cleaned in washing baths and sent to the refrigerator for dehydration. In the sorting and packaging zone, caviar is sorted, placed in packaging containers, weighed and labeled, after which it can be sent for sale or storage in a refrigerator.
